Post: Holiday Bird Bread

I just did some baking.......for the birds. The house
smells great and one of the humans almost ate some of
the "spice cake".......I want to share this
recipe.....this is my best batch ever:

Holiday Bird Bread

Start microwaving an extra-large sweet potato. While
that's going, put 6 carrots and 1/2 of a green pepper in a
food processor and pulse a few times until it's grainy.
Add 4 eggs, the cooked sweet potato, 2 squeezes of honey,
3 teaspoons of baking soda, 1/2 c. water, and 1/2 c. olive
oil. Process some more. Transfer this all to a large
mixing bowl and grind up some raw nuts (1/2 c. maybe...I
used almonds & cashews....yummy) and add those. Hand-
mix. Now stir in 2 c. of whole wheat flour and 2 c. corn
flour (the good stuff from the bulk section). I had to
use a hand mixer to get this mixed. It should be a stiff
nasty batter. Spray a large 9x13 or larger pan w/ Pam
spread the batter to about 1" thick. You might need 2
small pans.....keep in 1" thick. I baked mine at 350 for
about 45-50 mins. When cool, share some immediately with
your fids and cut the rest into 1x1 squares and freeze.
Serve frozen daily; they love it!! Bon Apetit!
